Add butter, vanilla, and eggs. Beat with an electric mixer on medium speed until well combined and smooth
Add chocolate chips and fold in with a spatula or spoon.
Set oven to preheat 350, and while the oven prepares - put the cookie mixture bowl into the fridge to cool (this is my secret pro tip! Keeps cookies soft and stops the dough from spreading)
Drop by rounded tbspfuls (or mini ice cream scooper) on a cookie sheet covered in parchment paper/baking mat about 2 inches apart
Bake for 9-11 minutes. Remove and let sit on baking sheet for 2 minutes before moving to a wire rack
