Our go to chocolate chip cookie recipe is actually a little bit of a cheater-code method but they are so quick, easy, and downright delicious that I don’t mind cutting the corners for these yummy treats!
You see, we have an unofficial policy in our house that we don’t ever buy cookies from the store – if we are craving cookies, we need to make them. Of all my Pinterest boards, probably my Sweets for my Sweeties board is accessed the most because we are always craving cookies over here! And after I found this recipe several years ago from Dear Crissy, this particular cake mix recipe with a tweak or two has become a staple here in our house!
It’s no secret that chocolate chip cookies are a versatile dessert that is appropriate for almost every situation. If you don’t have a go-to recipe in your back pocket, then I heavily encourage you to consider making this your fool-proof choice of recipe!
Some moments are just better when chocolate chip cookies are present. For example, here are some instances that ‘basically require’ a batch of chocolate chip cookies:
- After school snack (baking cookies is the best smell to come home to after a long day at school!)
- perfect little ‘half birthday’ dessert
- a little extra celebration after a great day or a job well done
- a pick-me-up after a tough day, break-up, or bummer
- national chocolate chip cookie day: August 4
- delivery to a friend or neighbor in need of some extra love
- surprising your bus driver with a morning thank you
- Great to pack for a snack for outdoor play or hiking
And don’t let those kiddos off the hook – these are so easy they can definitely help throw these together!
- 10+ years can follow the recipe and make them with minimal supervision
- 5+ years can add all pre-measured ingredients and even crack the eggs in
- 2+ years can help add chocolate chips and taste test!
I will warn you though – these cookies do not last long because they are so delicious! They are soft, chocolately, and delightful. In our house, they don’t make it past 12 hours without being devoured. So if we are surprising a friend or loved one with them – I always have to box them up right away and put a note on them so sticky little hands don’t try to sneak them!
We have made these cookies for a birthday party (in place of a cake at the request of our daughter), as a contribution to potlucks, parties, and get-togethers, or for just an afternoon snack.
I get compliments on these cookies every time I share them. It’s almost embarassing to share the recipe because it is so easy, but I always do because the more people baking and eating chocolate chip cookies on a regular basis I think probably helps boost world happiness, right?
Cake Mix Chocolate Chip Cookies
Ingredients
- 1 box Yellow Cake Mix (any brand)
- 1/3 cup Butter softened
- 1 tsp vanilla extract
- 2 eggs
- 2 cup chocolate chips
Instructions
- Open cake mix and dump into a medium size bowl
- Add butter, vanilla, and eggs. Beat with an electric mixer on medium speed until well combined and smooth
- Add chocolate chips and fold in with a spatula or spoon.
- Set oven to preheat 350, and while the oven prepares – put the cookie mixture bowl into the fridge to cool (this is my secret pro tip! Keeps cookies soft and stops the dough from spreading)
- Drop by rounded tbspfuls (or mini ice cream scooper) on a cookie sheet covered in parchment paper/baking mat about 2 inches apart
- Bake for 9-11 minutes. Remove and let sit on baking sheet for 2 minutes before moving to a wire rack
So pull out that random cake mix box you’ve had sitting on your pantry shelf for the last few months and use it to mix up a batch of chocolate chips cookies that will put smiles on all the faces you love best of all. Or get those big kids to help and they’ll feel like bonafide bakers when they are impressing everyone with their cheater-code chocolate chip cookies!
